Eco-Friendly Reynold's Wrap!

The days are getting longer and the weather has been amazingly beautiful lately! This combination means that my family spends more and more time on the run and we need easy to transport snacks! One of my favorites is the Fruit and Oatmeal bar snack that we introduced to you last August. My family goes through these like there's no tomorrow!

In an effort to keep ahead of the demand, I have been making double batches and freezing a portion of the bars-they freeze really well! One of our readers had asked our Eggspert which items freeze the best-and this is a perfect candidate. All you need to do is wrap the uncut bars in plastic wrap AND foil and they will taste as fresh as if you made them that day! All the foil is good for protecting the bars, but not good for the environment!

As I was looking for new recipe ideas, I was eggsploring Mary Audet's blog, author of BakingDelights.com and Eggology Egg Whites endorser, and discovered the answer to my dilemma - 100% Recycled Foil from Reynold's Wrap! I was excited to find a way to have my bars on hand at all times AND be nice to Mother Earth! Mary says the recycled foil works just as well as the real stuff! We at Eggology are happy to share these suggestions that we complied through resources such as Earth 911, Treehugger and Ecology Fund to help us be more mindful of our beautiful planet and keep money in our wallets. Start today to make a difference today, tomorrow and beyond!

1. Create a Non Toxic Environment in Your Home
Your pets and family will appreciate living in a non-toxic environment. Gather up all products in your house or garage that contain unsafe chemicals and drop off at your local hazardous waste facility or attend a hazardous waste (HHW) event if available in your community. Examples of what needs to be disposed of at a hazardous waste facility:
  • Paint
  • Solvents
  • Batteries
  • Automotive Products such as Motor Oil, antifreeze, transmission fluid
  • Household cleaners such as rug cleaners, oven cleaner and drain cleaner
  • Kerosene
  • Pesticides such as weed killer, flea products and insect killer

2. When Possible, Bike, Walk or Utilize Public Transportation
With the increasing number of commuters across the US, cars are largely responsible for creating one of the largest carbon footprints of all transportation. Utilize public transportation, carpool, or bike: your wallet and waistline will thank you!

3. Conserve Energy By Upgrading to Energy-Efficient Lighting Compact Fluorescent Lamps (CFLs)
Initially, these bulbs may cost more than incandescent bulbs, but they also last up to 10 times longer. CFLs can substitute incandescent in just about any light fixture in your home.
*Recycle CFLs when they finally do run out to keep the mercury content out of landfills.

4. Reduce Waste
Simple choices we make each day can have a massive impact on the well being of our planet by reducing the need to create waste and filling our landfills.

  • When eating out or purchasing take out, request not to receive any unnecessary plastic utensils, straws, etc.

  • Buy products in bulk and/or contain the least amount of packaging. Avoiding convenience foods will save money and greatly reduce the amount of wasteful trash produced by your household.

  • Replace paper napkins and towels with cloth napkins. Store used napkins or towels in a small container in your kitchen and just wash and reuse as needed.

  • Print documents only when necessary, print on once-used paper and/or bleach-free, recycled paper with the highest post-consumer waste content available.

  • Check with your service and utility companies to request going to paperless billing. Most bills can be paid online, and you will save quite a bit of money in postage stamps!

  • Reuse paper you would otherwise toss by converting them into scratch pads.

  • Invest in a quality lunchbox with reusable containers to carry your lunch.

  • Invest in re-usable shopping bags.

5. Conserve water
Did you know that only 3% of the earth's water is freshwater? In addition, water-related energy consumes a large amount of energy. Here are some tips to protect this precious and critical resource and save yourself money:

  • Choose to water your lawn in the evenings when the air is cooler (never in mid day) to minimize evaporation. Let grass grow longer and plant native or drought-tolerant garden plants.

  • Avoid letting faucets run. Don't let the water run when brushing your teeth, shaving, etc. Instead of letting the water run while cleaning your veggies rinse them in a pot with water.

  • Limit your shower time. A one or two minute reduction can save you 700 gallons! Better yet, install a low-flow shower head to reduce the amount of water used.

6. Teach Your Children
Be an example to your child by adapting eco friendly, sustainable habits into your daily routine. Teach them the importance of preserving our planet so they will continue this movement in the future. Plant a tree with a child and teach them to appreciate nature by hiking and walking in the woods. This tip is the most important thing we can do to protect the future of our planet and humanity.

“Buff Dad” Stays Fit and Eats Eggology Egg Whites

Mike Levinson, R.D., the author of “BUFF DAD: The 4-Week Fitness Game Plan for Real Guys” describes “Dad fat” as “the extra weight and responsibility of fatherhood converted into body mass. Also known as blubber; dreaded spare-tire gut. See also chubby hubby”. After Levinson became a father, he amassed “Dad fat” which inspired him to write the book “BUFF DAD” geared at helping dads lose their spare tire and, equally important, keeping it off.

Along with a do-at-home exercise program, Levinson, a Registered Dietitian, suggests setting a meal routine – including eating the same thing day after day. One of Levinson’s staples is egg whites and he uses Eggology fresh liquid egg whites because they are a pure source of protein.

Recently featured in a news clip on CBS night time news, Levinson was shown cooking his egg white omelet made with Eggology egg whites.

Oprah Learns How to Live Longer!

Oprah recently interviewed David Murdock, an 85 year old man that can do 50 push-ups without a break and has the blood pressure of a teenager. He says his secret to being healthy, never taking as much as an aspirin and avoiding the flu and even the common cold for the past 20 years is his diet! What's his secret? He eats tons of fruits and vegetables and never eats saturated fats.

For breakfast, he eats natural oatmeal with berries. Lunch consists of lots of veggies in an egg white omelet, such as Eggology's Spinach Egg White Omelet. Dinner includes more veggies, along with a nice piece of fish. He also drinks fruit and vegetable smoothies throughout the day. I agree with Oprah, the smoothie doesn't LOOK great, but I'm sure it is yummy-not to mention the health benefits of eating well!

I'm off to Costco to stock up on David's Diet Recommendations - if I can avoid the dreaded cold and flu, not to mention feeling great at 85, I think I can sacrifice the saturated fats! Happy Eating!

Eggology Egg White Recipe of the Day: Starbucks Chocolate Meringue Drops

Eggology egg whites were featured in a recipe on an interesting blog. It's all about "Top Secret Restaurant Recipes" and features supposedly top secret recipes from lots of famous restaurants and stores. We can't vouch for whether or not this is the actual recipe that Starbucks uses for their chocolate meringue drops, but we like that they suggest using Eggology egg whites to make them! Eggology egg whites are naturally sweetened and would enhance any meringue recipe - top secret or not!


CHOCOLATE MERINGUE DROPS (supposedly Starbucks recipe)

WHAT YOU NEED
1/3 cup egg whites = (or 1/3 cup Eggology liquid egg whites)
1/2 cup white sugar
6 ounces semi sweet chocolate chips - (3/4 cup)
1/2 teaspoon pure vanilla
1/2 teaspoon almond extract
1 cup chopped walnuts - (generous)



INSTRUCTIONS

Preheat oven to 350 degrees. Place rack in lower third of oven.

Cover two large baking sheets with parchment paper.

In a small metal bowl, beat egg whites, adding sugar slowly, until the whites are stiff but not dry. Using a rubber spatula, carefully stir in melted chocolate, vanilla, almond extract and chopped nuts into egg whites.

Drop spoonfuls of batter -- about 1 1/2 to 2 tablespoons -- onto the parchment lined baking sheets.

Bake for 12 to 15 minutes or until tops are completely dry. Do not overbake. Cool completely in pan before removing with a spatula.
This recipe yields 12 to 18 cookies.

Earth day is just a month away! For the 39th year, we will come together to celebrate the Earth on April 22nd.

It truly is remarkable to think about how far we have come in protecting our health and safeguarding the environment! The government's Environmental Protective Agency (EPA) has pulled together facts on our Environmental Progress. Below are some of the impressive highlights from that list:

Ernestine Shepherd is Eggstraordinary!

Eggology loves to hear from customers! Especially those that are so inspiring that we feel compelled share their story with the world.

Recently we received a letter from Ernestine Shepherd - long time user of Eggology egg whites. She first heard about our product in 2002, where she was introduced to Eggology by Brad Halpern, chief eggsecutive, at a trade show. Explaining the benefits of egg whites and the quality of Eggology products had her hooked! She has been ordering them for the last 7 years - incorporating Eggology egg whites into her diet by drinking them three times per day. About Eggology she says, "I swear by your liquid egg whites..." and notes that her shipments have always been "on time and in good condition".

What makes her story so unique and amazing? Ernestine is a personal trainer in Baltimore. She participated in her first body building competition last year. Upon further research, we noted that she also likes to do 5Ks, 10Ks and marathons and teaches fitness classes. We realize this sounds typical, until we reveal this about Ernestine - she is 72 years old! Take a look at her picture below and give yourself a few minutes of silence to revel in awe!

GroceryHeadquarters - the go-to site for grocery store executives for strategic planning - recently featured Eggology in their "Selling Wellness" section of their publication that featured smart, and convenient, breakfast choices. As told by Brad Halpern, Eggology's Chief Eggsecutive, what makes Eggology egg whites unique from all the other brands on the market is that they are "... made to order. We literally break the eggs as the orders come in."

Also featured were the On-The-Go microwaveable scrambles. About 95 seconds in the microwave makes fluffy egg whites with no mess! With nothing added - chemicals, colors or gums - and no fat, no cholesteral but packed with pure protein, that makes egg whites a no-brainer option for breakfast!

Eggology Egg White Recipe of the Day: Chocolate Peanut Butter Souffle

I have been obsessed with peanut butter lately (check out a previous post for High Protein Peanut Butter Yogurt - I can't stop eating this!). Of course, this comes at a time with all the scary news stories about peanut butter contamination and recalls. (Note I found this handy page from the FDA that lists the most current peanut recalls. Refer to this daily - a great inspiration for caloric-intake restriction!). Alas, if you are truly paranoid, grind up some of your own homemade peanut butter - it is simple - all you need is about 1 and 1/2 cups peanuts and 1 tablespoon peanut oil, mix together, blend in food processor until smooth. Beautiful!

Use that homemade peanut butter for the recipe below - it is categorized as a "breakfast" recipe - however I think this is a fabulous one for any time of day (think dessert). Enjoy!
Chocolate Peanut Butter Souffle

WHAT YOU NEED:
1/3 cup Eggology egg whites
1 teaspoon cocoa
15 grams (approx.) chocolate whey
1-2 teaspoons natural peanut butter (crunchy or smooth - your choice)
1 tablespoon natural yogurt
1/2 banana, sliced

INSTRUCTIONS
Preheat the oven to about 350º F.

Beat the Eggology egg whites till stiff. Mix the cocoa, whey, peanut butter, and yogurt in a separate bowl until well blended. Gently fold in the egg whites in 2 or 3 lots.

Heat a non-stick omelet pan with an ovenproof handle, brush with a tiny amount of oil and pour in the mixture, spreading evenly. Turn off the heat and place the pan in the oven for 2-3 minutes.
You want the finished product to be cooked through, but still flexible.
Slide the omelet onto a plate, spread banana slices over one half and fold the other side over. Voila!

You can make it less healthy and more decadent if you like, with extra peanut butter and some melted dark chocolate. And maybe some cream instead of yogurt. Or try dark chocolate chips, either stirred through the egg whites or sprinkled on with the banana.

Strong to the Finish!

We first came across our Diva on a Diet late last year. She is different than most, in that she actually lets you go through her weight loss journey with you - actual weight, successes and failures, all for the blogosphere to see! Her site is full of inspiration and information that is definitely worth checking out!

Taking a Weight Watchers approach to one of her favorite restaurants specialties, she came up with the following healthy and delicious recipe!

Popeye's Omelet
1 Serving

WHAT YOU NEED:
1 slice Niman Ranch All Natural Applewood Smoked Uncured Center Cut Bacon (Nitrate Free)
1/8 - 1/4 cup fresh sliced mushrooms
1/2 cup Market Pantry Flake Style Crab Flavored Seafood with Omega-3
PAM Butter Flavor Cooking Spray
1/2 cup Eggology Organic 100% Egg Whites
1/4 teaspoon Morton Lite Salt Mixture
1/8 teaspoon fresh cracked black pepper
1/8 - 1/4 cup fresh baby spinach
1 Individual 1 oz cup Weight Watchers Reduced Fat Cream Cheese Spread

INSTRUCTIONS:
Cook bacon over medium heat in an 8″ skillet until crisp. Set aside, and reserve 1 tsp bacon fat in the pan.

Add mushrooms to pan. I didn’t really measure them, I just put them in a layer in the pan until no more could fit, which is estimate is about 1/8 to 1/4 cup. Same thing with the spinach. I just grabbed a bunch that I estimated was the same amount. Since they are both healthy and 0 points, I am not as exact with these. While the mushrooms are sauteing, pull stems from the spinach, but the leaves in a pile and roll it up, and then slice, so you get pretty little ribbons of spinach.

Measure out the imitation crab meat. I use my Weight Watchers scale. If you don’t have one, just measure about 1/2 cup. (but you really should get a kitchen scale. They are very useful when measuring caloric-dense food!) Chop up the crab meat into smaller pieces. Crumble up the bacon slice.

Turn over mushrooms, and add crab meat. Leave it in long enough to make sure mushrooms are nice and sauteed, and the crab meat is warm. Set aside. (I put it in a little bowl, and cover with foil to keep warm.)

Spray pan with cooking spray. Add egg whites, and sprinkle with salt and pepper, and then the spinach. When the eggs have set enough to stay together, flip over entire egg. Spread the cream cheese on one side of the egg omelet. (I put the little cup in the microwave for no more than 10 seconds to get it really soft and easy to spread.) Then add the mushroom and crab meat mixture and then the crumbled bacon. Close up the omelet. Because there is not a lot of sticky cheese, it doesn’t stay together that well, so I just let it sit there until I figure it is heated thoroughly and then put it on the plate. I had a couple extra bacon crumbles and strips of spinach that I put on the top.

"Biggest Loser" Daniel Wright Eats Eggology!

The TV show Biggest Loser's biggest contestant ever - weighing in at 454 pounds and just 19 years old - eats Eggology egg whites!! We have seen bottles of Eggology here and there on the show and recently when Daniel was let go from the show, we saw him featured on Access Hollywood, talking about his diet and his intention to keep at it!

In the clip below, he loads up on fruits and veggies at his local grocery store, and before he does that, he places a jar of Eggology egg whites into his cart. Why egg whites? He mentions that he is sticking to eating 1,500 calories per day. For those of you who count calories, you know that this isn't a lot at all! A 1/2 cup of liquid egg whites - which scrambles up to a nice portion - is only 60 calories. With no cholesterol or fat to count, he can enjoy Eggology egg whites at every meal knowing he is getting lean, natural protein with a very small calorie count.

Daniel is a big inspiration to all of us and we wish him the best!

Eggology Egg White Recipe of the Day: Fluffy Cheesecake

The Atlanta Journal-Constitution (AJC), an online paper for the Atlanta area, featured Eggology egg whites in a recipe yesterday in their "From Market to Kitchen" section - perfect timing for our weekly recipe post.

A reader wrote in to AJC's "Food Goddess" journalist asking if she had a recipe for "St. Louis-style chiffon cheesecake". Sure enough, she did. And she mentions that some of the elements contributing to this light, airy texture of the cheesecake are ingredients such as "gelatin, beaten egg whites and whipped cream". She goes on to say, "If you are concerned about the small risk of salmonella from raw or partially cooked eggs, use pasteurized eggs. Because the whites from pasteurized whole eggs don’t beat as well as regular eggs, I like to use a packaged pasteurized egg white product like Eggology." Great choice! Recipe follows:

Fluffy Cheesecake
12-16 servings
Hands on: 30 minutes
Total time: 3 1/2 hours

Note: Serve plain or top with fresh fruit, pie filling or a sprinkle of reserved crust crumbs.

WHAT YOU NEED:

For the crust:
1 sleeve graham crackers, crumbled, or 1 1/3 cups graham cracker crumbs
1/3 cup granulated sugar
1/4 cup butter, melted

For the cheesecake:
2 envelopes gelatin
1/2 cup cold water
4 eggs, separated, divided
3/4 cup granulated sugar
1/2 teaspoon salt
1/3 cup milk
3 (8-ounce) packages cream cheese, room temperature
1/2 cup granulated sugar
1 cup heavy cream

INSTRUCTIONS:

To prepare the crust:

Preheat oven to 375 degrees. In a bowl, combine graham cracker crumbs, sugar and butter. Press mixture onto the bottom of a 10-inch springform pan to form a thin layer (if you have enough, press up the sides a little, too).
Bake for 10 minutes. Set aside to cool.

To prepare the cheesecake:

Meanwhile, in a bowl, stir together gelatin and water and set aside. In the top of a double boiler, combine yolks, 3/4 cup sugar, salt and milk. Stirring constantly, cook until thickened and the mixture coats the back of a spoon.

Remove from heat and stir gelatin into hot custard mixture, stirring well to combine. Set aside.

With an electric mixer, beat cream cheese until smooth. On low speed, add custard mixture until combined.

Whip reserved egg whites to soft peaks. Gradually add 1/2 cup sugar and continue beating to stiff peaks. Gently fold into custard mixture.

Whip cream until it softly peaks and gently fold into custard mixture.

Spoon cheesecake mixture into completely cooled crust. Refrigerate at least 3 hours before serving.

Per serving: 470 calories (percent of calories from fat, 63), 8 grams protein, 37 grams carbohydrates, trace fiber, 33 grams fat (20 grams saturated), 171 milligrams cholesterol, 379 milligrams sodium.
