Banana Bread with a Twist and Eggology Egg Whites!

We gave you a recipe for an awesome Banana Bread last May and thought it was time to give another. I love banana bread-it's such an easy way to use up old, um, I mean ripe, banana's and have a yummy snack that lasts for a week in the fridge or up to 2 months in the freezer.

This time, we thought we would mix it up a bit and add some applesauce to add moisture and flavor. It's so yummy you might not have any left over for freezing!

Banana Bread with Applesauce
  • Prep time: 20
  • Cook time: 60
  • Yield: 1 large loaf or 4 mini-loaves

WHAT YOU NEED:

  • 2 1/2 cup all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 cup applesauce
  • 1 cup sugar
  • 3 oz, Eggology Fresh Egg Whites
  • 4 bananas peeled & mashed
  • 1 tsp vanilla extract
INSTRUCTIONS:

1. Preheat oven to 350-degrees. Spray an 8 x 4 x 3 - inch loaf pan or 4 mini-loaf pans (5 x 2 1/2 - inch ) with non-stick cooking spray.
2. Combine flour, baking powder, baking soda and cinnamon in a small bowl and set aside.
3. In a large mixing bowl, stir together the applesauce, sugar, egg whites, banana and vanilla. Add flour mixture all at once and stir gently to blend.
4. Pour batter intoprepared loaf pan or the mini pans and bake for 50-60 minutes or until a knife inserted into the center comes out clean. Cool bread in the pan on wire racks. Once the bread has cooled, you can enjoy right away, or wrap tightly and put in the fridge or freezer.

Eggology Egg White Recipe of the Day: Homemade Oat Protein Bars

Store bought protein bars can be expensive and are often loaded with sugar and extra calories. Save some dough and make your own! These healthy snacks are great for satisfying post workout and morning nutritional needs. Click here for more delicious and healthy snack recipes!

Healthy Homemade Oat Protein Bars

WHAT YOU NEED:

10 tbsp natural peanut butter
3/4 cup Eggology egg whites
5 scoops whey protein (I used 3 chocolate and 2 vanilla)
2 cups oats
1/2 cup reduced-fat crunchy peanut butter
1/2 cup soy milk (or fat-free milk)

INSTRUCTIONS

1. Mix the peanut butter and Eggology egg whites in a bowl.
2. Microwave on high for 30 seconds, and mix well (so that the mixture appears smooth).
3. Repeat 4-5 times until all traces of egg whites have dissolved into the peanut butter, and your mixture is a smooth consistent one.
4. Gradually add the protein (one scoop at a time) and stir into the mixture.
5. Next, add the soy milk and follow with the oats. Continue mixing until a thick 'sticky' mixture is present.

Smooth the thick mixture into a 13x9 or so tray and leave for 20-30 minutes in the fridge. Cut into 12 equal size bars.

Eggology Egg White Recipe of the Day: Spinach & Orange Scramble

Looking for a healthy, refreshing breakfast with a little zest? Eggology's featured recipe - Spinach & Orange Eggwhite Scramble is simple and nutritious - great way to start your day!

WHAT YOU NEED:
3/4 cup Eggology egg whites
2 tablespoons tomato sauce
nonfat cooking spray
4 ounces fresh spinach, well washed and stems trimmed
dash of cayenne pepper
salt to taste
grated rind of one orange

INSTRUCTIONS
Beat the Eggology egg whites until frothy, then blend in the tomato sauce.

Heat a skillet over a medium flame and spray with cooking spray.

Sauté the spinach until it is wilted and there is no liquid in the pan. Pour in the Eggology egg whites, season with cayenne pepper, and salt and cook slowly, stirring until thickened.

Sprinkle with grated orange rind and serve immediately.

Eco-Friendly Reynold's Wrap!

The days are getting longer and the weather has been amazingly beautiful lately! This combination means that my family spends more and more time on the run and we need easy to transport snacks! One of my favorites is the Fruit and Oatmeal bar snack that we introduced to you last August. My family goes through these like there's no tomorrow!

In an effort to keep ahead of the demand, I have been making double batches and freezing a portion of the bars-they freeze really well! One of our readers had asked our Eggspert which items freeze the best-and this is a perfect candidate. All you need to do is wrap the uncut bars in plastic wrap AND foil and they will taste as fresh as if you made them that day! All the foil is good for protecting the bars, but not good for the environment!

As I was looking for new recipe ideas, I was eggsploring Mary Audet's blog, author of BakingDelights.com and Eggology Egg Whites endorser, and discovered the answer to my dilemma - 100% Recycled Foil from Reynold's Wrap! I was excited to find a way to have my bars on hand at all times AND be nice to Mother Earth! Mary says the recycled foil works just as well as the real stuff! Oprah Learns How to Live Longer!

Oprah recently interviewed David Murdock, an 85 year old man that can do 50 push-ups without a break and has the blood pressure of a teenager. He says his secret to being healthy, never taking as much as an aspirin and avoiding the flu and even the common cold for the past 20 years is his diet! What's his secret? He eats tons of fruits and vegetables and never eats saturated fats.

For breakfast, he eats natural oatmeal with berries. Lunch consists of lots of veggies in an egg white omelet, such as Eggology's Spinach Egg White Omelet. Dinner includes more veggies, along with a nice piece of fish. He also drinks fruit and vegetable smoothies throughout the day. I agree with Oprah, the smoothie doesn't LOOK great, but I'm sure it is yummy-not to mention the health benefits of eating well!

I'm off to Costco to stock up on David's Diet Recommendations - if I can avoid the dreaded cold and flu, not to mention feeling great at 85, I think I can sacrifice the saturated fats! Happy Eating!

Eggology Egg White Recipe of the Day: Starbucks Chocolate Meringue Drops

Eggology egg whites were featured in a recipe on an interesting blog. It's all about "Top Secret Restaurant Recipes" and features supposedly top secret recipes from lots of famous restaurants and stores. We can't vouch for whether or not this is the actual recipe that Starbucks uses for their chocolate meringue drops, but we like that they suggest using Eggology egg whites to make them! Eggology egg whites are naturally sweetened and would enhance any meringue recipe - top secret or not!


CHOCOLATE MERINGUE DROPS (supposedly Starbucks recipe)

WHAT YOU NEED
1/3 cup egg whites = (or 1/3 cup Eggology liquid egg whites)
1/2 cup white sugar
6 ounces semi sweet chocolate chips - (3/4 cup)
1/2 teaspoon pure vanilla
1/2 teaspoon almond extract
1 cup chopped walnuts - (generous)



INSTRUCTIONS

Preheat oven to 350 degrees. Place rack in lower third of oven.

Cover two large baking sheets with parchment paper.

In a small metal bowl, beat egg whites, adding sugar slowly, until the whites are stiff but not dry. Using a rubber spatula, carefully stir in melted chocolate, vanilla, almond extract and chopped nuts into egg whites.

Drop spoonfuls of batter -- about 1 1/2 to 2 tablespoons -- onto the parchment lined baking sheets.

Bake for 12 to 15 minutes or until tops are completely dry. Do not overbake. Cool completely in pan before removing with a spatula.
This recipe yields 12 to 18 cookies.

Eggology Egg White Recipe of the Day: Chocolate Peanut Butter Souffle

I have been obsessed with peanut butter lately (check out a previous post for High Protein Peanut Butter Yogurt - I can't stop eating this!). Of course, this comes at a time with all the scary news stories about peanut butter contamination and recalls. (Note I found this handy page from the FDA that lists the most current peanut recalls. Refer to this daily - a great inspiration for caloric-intake restriction!). Alas, if you are truly paranoid, grind up some of your own homemade peanut butter - it is simple - all you need is about 1 and 1/2 cups peanuts and 1 tablespoon peanut oil, mix together, blend in food processor until smooth. Beautiful!

Use that homemade peanut butter for the recipe below - it is categorized as a "breakfast" recipe - however I think this is a fabulous one for any time of day (think dessert). Enjoy!
Chocolate Peanut Butter Souffle

WHAT YOU NEED:
1/3 cup Eggology egg whites
1 teaspoon cocoa
15 grams (approx.) chocolate whey
1-2 teaspoons natural peanut butter (crunchy or smooth - your choice)
1 tablespoon natural yogurt
1/2 banana, sliced

INSTRUCTIONS
Preheat the oven to about 350º F.

Beat the Eggology egg whites till stiff. Mix the cocoa, whey, peanut butter, and yogurt in a separate bowl until well blended. Gently fold in the egg whites in 2 or 3 lots.

Heat a non-stick omelet pan with an ovenproof handle, brush with a tiny amount of oil and pour in the mixture, spreading evenly. Turn off the heat and place the pan in the oven for 2-3 minutes.
You want the finished product to be cooked through, but still flexible.
Slide the omelet onto a plate, spread banana slices over one half and fold the other side over. Voila!

You can make it less healthy and more decadent if you like, with extra peanut butter and some melted dark chocolate. And maybe some cream instead of yogurt. Or try dark chocolate chips, either stirred through the egg whites or sprinkled on with the banana.

Strong to the Finish!

We first came across our Diva on a Diet late last year. She is different than most, in that she actually lets you go through her weight loss journey with you - actual weight, successes and failures, all for the blogosphere to see! Her site is full of inspiration and information that is definitely worth checking out!

Taking a Weight Watchers approach to one of her favorite restaurants specialties, she came up with the following healthy and delicious recipe!

Popeye's Omelet
1 Serving

WHAT YOU NEED:
1 slice Niman Ranch All Natural Applewood Smoked Uncured Center Cut Bacon (Nitrate Free)
1/8 - 1/4 cup fresh sliced mushrooms
1/2 cup Market Pantry Flake Style Crab Flavored Seafood with Omega-3
PAM Butter Flavor Cooking Spray
1/2 cup Eggology Organic 100% Egg Whites
1/4 teaspoon Morton Lite Salt Mixture
1/8 teaspoon fresh cracked black pepper
1/8 - 1/4 cup fresh baby spinach
1 Individual 1 oz cup Weight Watchers Reduced Fat Cream Cheese Spread

INSTRUCTIONS:
Cook bacon over medium heat in an 8″ skillet until crisp. Set aside, and reserve 1 tsp bacon fat in the pan.

Add mushrooms to pan. I didn’t really measure them, I just put them in a layer in the pan until no more could fit, which is estimate is about 1/8 to 1/4 cup. Same thing with the spinach. I just grabbed a bunch that I estimated was the same amount. Since they are both healthy and 0 points, I am not as exact with these. While the mushrooms are sauteing, pull stems from the spinach, but the leaves in a pile and roll it up, and then slice, so you get pretty little ribbons of spinach.

Measure out the imitation crab meat. I use my Weight Watchers scale. If you don’t have one, just measure about 1/2 cup. (but you really should get a kitchen scale. They are very useful when measuring caloric-dense food!) Chop up the crab meat into smaller pieces. Crumble up the bacon slice.

Turn over mushrooms, and add crab meat. Leave it in long enough to make sure mushrooms are nice and sauteed, and the crab meat is warm. Set aside. (I put it in a little bowl, and cover with foil to keep warm.)

Spray pan with cooking spray. Add egg whites, and sprinkle with salt and pepper, and then the spinach. When the eggs have set enough to stay together, flip over entire egg. Spread the cream cheese on one side of the egg omelet. (I put the little cup in the microwave for no more than 10 seconds to get it really soft and easy to spread.) Then add the mushroom and crab meat mixture and then the crumbled bacon. Close up the omelet. Because there is not a lot of sticky cheese, it doesn’t stay together that well, so I just let it sit there until I figure it is heated thoroughly and then put it on the plate. I had a couple extra bacon crumbles and strips of spinach that I put on the top.

Eggology Egg White Recipe of the Day: Fluffy Cheesecake

The Atlanta Journal-Constitution (AJC), an online paper for the Atlanta area, featured Eggology egg whites in a recipe yesterday in their "From Market to Kitchen" section - perfect timing for our weekly recipe post.

A reader wrote in to AJC's "Food Goddess" journalist asking if she had a recipe for "St. Louis-style chiffon cheesecake". Sure enough, she did. And she mentions that some of the elements contributing to this light, airy texture of the cheesecake are ingredients such as "gelatin, beaten egg whites and whipped cream". She goes on to say, "If you are concerned about the small risk of salmonella from raw or partially cooked eggs, use pasteurized eggs. Because the whites from pasteurized whole eggs don’t beat as well as regular eggs, I like to use a packaged pasteurized egg white product like Eggology." Great choice! Recipe follows:

Fluffy Cheesecake
12-16 servings
Hands on: 30 minutes
Total time: 3 1/2 hours

Note: Serve plain or top with fresh fruit, pie filling or a sprinkle of reserved crust crumbs.

WHAT YOU NEED:

For the crust:
1 sleeve graham crackers, crumbled, or 1 1/3 cups graham cracker crumbs
1/3 cup granulated sugar
1/4 cup butter, melted

For the cheesecake:
2 envelopes gelatin
1/2 cup cold water
4 eggs, separated, divided
3/4 cup granulated sugar
1/2 teaspoon salt
1/3 cup milk
3 (8-ounce) packages cream cheese, room temperature
1/2 cup granulated sugar
1 cup heavy cream

INSTRUCTIONS:

To prepare the crust:

Preheat oven to 375 degrees. In a bowl, combine graham cracker crumbs, sugar and butter. Press mixture onto the bottom of a 10-inch springform pan to form a thin layer (if you have enough, press up the sides a little, too).
Bake for 10 minutes. Set aside to cool.

To prepare the cheesecake:

Meanwhile, in a bowl, stir together gelatin and water and set aside. In the top of a double boiler, combine yolks, 3/4 cup sugar, salt and milk. Stirring constantly, cook until thickened and the mixture coats the back of a spoon.

Remove from heat and stir gelatin into hot custard mixture, stirring well to combine. Set aside.

With an electric mixer, beat cream cheese until smooth. On low speed, add custard mixture until combined.

Whip reserved egg whites to soft peaks. Gradually add 1/2 cup sugar and continue beating to stiff peaks. Gently fold into custard mixture.

Whip cream until it softly peaks and gently fold into custard mixture.

Spoon cheesecake mixture into completely cooled crust. Refrigerate at least 3 hours before serving.

Per serving: 470 calories (percent of calories from fat, 63), 8 grams protein, 37 grams carbohydrates, trace fiber, 33 grams fat (20 grams saturated), 171 milligrams cholesterol, 379 milligrams sodium.

Eggology Egg White Recipe of the Day: Hugs and Kisses Meringue Cookies

Love your loved ones this weekend - treat them to Hugs and Kisses Meringue Cookies!

WHAT YOU NEED:

4 oz. Eggology Egg Whites, at room temperature
¼ tsp. cream of tarter
Pinch of Salt
¾ cup sugar
7 drops red food coloring
3 Tbs. each pink and white decorating sugar

INSTRUCTIONS:
Preheat oven to 200 degrees F and move the racks to center. Line 3 cookie sheets with aluminum foil. Beat Eggology egg whites on medium-high with an electric mixer until foamy. Add cream of tartar and salt.

Beat on high until mixture forms soft peaks. Add sugar, by tablespoons, and continue beating until thick and glossy.

Spoon half the mixture into a gallon-size resealable bag or pastry bag with a plain 1//3 inch pastry tip. Tint remainder with red food coloring and spoon into another bag.

Pipe batter in a 3-inch X and O shapes and heart shapes onto prepared sheets. Sprinkle letters with decorating sugar. Bake an hour, then turn off oven and let cool and dry inside for at least two hours. Peel cookies from foil and store in an airtight container.

Pop-Up Cooking With Eggology

Were you glued to VH1 when their show Pop-Up Video was all the rage-letting you in on all the secrets of the rock stars, what went on during the filming of the video and other witty facts? We are seeing a resurgence of pop- ups on tv and online! Lost is updating their viewers every week with pop-ups to remind viewers of who did what-can you blame them, it's hard to keep track of five years of mystery. Other television shows are doing the same...they have found it adds to the viewing experience.

Eggology, being the super cool folks that we are thought we would help this new trend continue and are using pop-ups in our video of Italy's Best Broccoli Frittata Recipe.

Best Bets for Better Nutrition!

We are always looking for easy ways to incorporate flavor, while adding additional nutritional value to our meals. Veggies are the obvious choice, but do you know which ones provide the best bang for your buck?

You can add extra Vitamin C by adding bell peppers, bok choy, cabbage (red or green), cauliflower or broccoli to Eggology scrambled egg whites. All these veggies contain at least double our daily needs per serving. By adding any of these veggies to your meal, you boost your immune system and help out your cardiovascular system as well as adrenal functions!

Want to add potassium? A lot of people turn to a banana - but did you know that by eating bok choy, eggplant, potatoes, zucchini or spinach that you can get 100+milligrams MORE potassium than the banana? That's right-all these vegetables contain 500+ milligrams of potassium per serving. This helps regulate your blood pressure, anxiety and is used to treat muscle cramps!

How about adding some jicama, unpeeled eggplant, cabbage or squash or even braving the brussel sprouts to add 5 or more grams of fiber, per serving, to your diet. Fiber is responsible for lowering cholesterol, weight loss management and the most obvious, helping things move through your system.

Need more calcium for strong bones? Bok choy, collard greens, kale, spinach and mustard greens can all help with that-and if cooked properly, taste way better than getting your calcium from TUMS!

Eggology Egg White Recipe of the Day: Banana Chocolate Chip Muffins

Normally I pick recipes based on factors like the time of year (holiday season), type of weather or something similar to that. Today I picked this recipe because it just sounds good! This really needs no fancy introduction so ... without further ado, here it is!

Banana Chocolate Chip Muffins

WHAT YOU NEED:
1 cup all-purpose flour
1 cup whole-wheat pastry flour
1 cup brown sugar, packed
1 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup buttermilk
1/3 cup unsweetened applesauce
1/4 teaspoon vanilla extract
1 cup mashed ripe bananas (2 medium)
1/2 cup walnuts, chopped
1/2 cup chocolate chips


INSTRUCTIONS

Preheat oven to 350 degrees. Line muffin tins with baking paper cups.

In large bowl, whisk together flours, sugar, baking powder, baking soda and cinnamon. Make well in center of flour mixture.

In another bowl, beat Eggology egg whites until foamy. Stir buttermilk, applesauce and vanilla into egg whites. Add bananas to egg-white mixture until well-combined. Add banana mixture into flour mixture until just moistened. Fold in nuts and chocolate chips.

Spoon batter into lined muffin tins, filling each 3/4 full. Bake 20 to 22 minutes or until toothpick inserted in center comes out clean.

Cool in muffin cups about five minutes, then remove and cool on a wire rack.

Eggology Egg Whites Featured in Life & Style Weekly

Eggology liquid egg whites were mentioned in January 2009's Life & Style Weekly magazine. Our favorite celebrity trainer, Valerie Waters, put together a suggested recipe guide to help Life & Style readers drop 20 pounds in just four weeks! In the Friday breakfast section, Valerie suggests "Scramble 1/3 cup of Eggology liquid egg whites with asparagus, mushrooms and goat cheese. Add a piece of Ezekiel toast." Sounds great!

Eggology egg whites are always a smart choice. No cholesterol, no fat, organic, kosher, all natural with nothing added, the only egg whites safe to drink, and full of pure protein - a great way to start your day!

Eggology Egg White Recipe of the Day: High Protein Peanut Butter Yogurt

We've been running great snack recipes for the upcoming Super Bowl this Sunday. The following recipe is one of my favorites and I highly suggest eating this the morning of the super bowl. It's protein-packed and flavorful and will fill your stomach so your snack food binging can be kept to a minimum! Note that this is made with non-fat Greek yogurt because it is packed with protein. 1 cup of Greek yogurt has 22 grams of protein in comparison to 6 ounces of regular yogurt that has 6 grams of protein.

WHAT YOU NEED:

1 cup plain-flavored Greek yogurt
2 tablespoons peanut butter (or almond butter)
1 tablespoon Eggology egg whites
1/2 teaspoon (or more if desired) honey or agave nectar
Add in a few mini chocolate or carob chips (optional)

INSTRUCTIONS:

Place all ingredients in bowl, mix together until fluffy and creamy. Enjoy!

Simple Super Bowl Snacks - Volume Two!

As we go to press, the Super Bowl Battle will begin in just 3 days, 21 hours, 58 minutes and 21 seconds! Here is yet another recipe for some healthier options for snacks on this fun and friend filled day!

Oven-Fried Zucchini Sticks

6 Servings

WHAT YOU NEED:
Canola oil cooking spray
1/2 cup whole-wheat flour
1/2 cup all-purpose flour
2 tablespoons cornmeal
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 pounds zucchini (about 3 medium), cut into 1/2-by-3-inch sticks
2 ounces Eggology Egg Whites, lightly beaten

INSTRUCTIONS:
Preheat oven to 475 degrees. Coat a large baking sheet with cooking spray.

Combine flours, cornmeal, salt and pepper in a large sealable plastic bag. Dip zucchini in egg white, shake in the bag to coat, and arrange, not touching, on the baking sheet. Coat all exposed sides with cooking spray.

Bake on the center rack for 7 minutes. Turn the zucchini and coat any floury spots with cooking spray. Continue to bake until golden and just tender, about 5 minutes more. Serve hot.

These yummy treats boast low calories (only 108 per serving), no fat and taste GREAT! Enjoy!

Helpful Hint: If you are only occassionally using Eggology Egg Whites, you can freeze them so that you have the convenience and goodness of organic Eggology Egg Whites whenever you need them!

Simple, Low Fat Super Bowl Snacks!

Sunday, February 1st is a historic day! Ok, maybe not as big as Inauguration Day, but a big day for all football fans, especially Steelers and Cardinals Fans! Fans are counting down to Super Bowl XLIII (43 for those that are too lazy to figure out what all the letters mean!) is only 5 days away. Perhaps it's the game itself, or the half-time show or the commercials that you are looking forward to! Since my team didn't make it to this momentous day, I will be looking forward to the FOOD!

Over the next few days we'll be offering up some eggcellent Eggology ideas for Super Bowl Snacks featuring our very own products! Let's start off with a super simple one, one for those of you that can't even boil water. You can still pull this off with great success!

No-Cook Low Fat Deviled Eggs
Yield: 16 deviled eggs

WHAT YOU NEED:
4 packages Eggology All-Natural Hard Boiled Eggs, halved lengthwise
8 oz. non-fat plain yogurt
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon Dijon mustard
1 tablespoon minced pickles (my favorite are bread and butter pickles)
1 tablespoon finely chopped celery (optional)
dash paprika or chives (optional)

INSTRUCTIONS:
Remove egg yolks and set aside the whites. Cream the yolks and all remaining ingredients except the paprika and chives, until combined. Fill egg whites with yolk mixture. You can use a spoon or for a more sophisticated look, use a pastry bag and star tip. Chill. Before serving, sprinkle paprika or some chopped chives on top for a more finished look and great added flavor.

It doesn't get much easier than that AND they are SUPER delicious!

Impress Your Guests! Sweet Additions!

If you're like me, you enjoy a great dinner out! As each course comes out of the kitchen, you look at the presentation and wonder "How did they make that look so good!". There are always special occasions when you prefer to entertain at home, but still want your guests to have that "how did they do that" look on their face when they see their food. An easy way to incorporate some pizazz into your cooking is to add simple, yet tasty garnishes to a few dishes.

One of the easiest courses to play with is dessert. You can add fun colors with fruits and sauces and make the mundane look amazing with a simple tuile, which literally means "tile" but in the culinary world it is basically a very thin cookie that you can shape any way you like before it hardens. They can have a lacy look, or be solid, but regardless of how you use them, they are always a wonderful addition to a plate! (Side note here, you can do savory tuiles as well, but we'll save that for another day!)

Wondering how you can achieve this masterful look? It's really simple! All you need is a plastic lid-(a coffee can lid works really well for this) or a pre-made template, a metal spatula and a non-stick baking mat (such as a silpat). Now you are ready to impress your guests!

Basic Tuiles

Total time: About 1 hour, plus at least 1 hour chilling time

Servings: Makes 24 (4 1/2 -inch) tuiles or 36 (3 1/4 -inch) tuiles or 72 (2 3/4 -inch) tuiles

If you are making tuiles with designs, set aside one-half cup of the basic tuile recipe and stir in 4 teaspoons good-quality unsweetened cocoa powder. Use the chocolate batter to decorate the basic tuiles.

WHAT YOU NEED:
1/2 cup (1 stick) butter
1 1/2 cups plus 1 tablespoon
powdered sugar
1 cup plus 1 tablespoon flour
1/2 cup Eggology Egg Whites

INSTRUCTIONS
In a small saucepan, melt the butter over low heat. Set aside to cool while preparing the remaining ingredients.

Sift the powdered sugar and flour into a mixing bowl. In a stand mixer fitted with the paddle attachment, mix the dry ingredients and melted butter until incorporated. Beat in the egg whites, scraping down the sides and bottom of the bowl, just until the ingredients are combined.

Strain the batter through a fine-mesh strainer. Cover and chill at least 1 hour or overnight. Remove the chilled dough from the refrigerator; let stand 5 to 10 minutes to temper.

Heat the oven to 350 degrees. Use a piece of flexible cutting mat or material of similar thickness such as a plastic coffee can lid to make a template. You can cut out circles or any shape you want!
Place the template on a Silpat-lined baking sheet. Spread a small amount of the dough until it evenly covers the template cut-out and doesn't come above the plastic-these are really thin!

If making tuiles with designs (such as stripes or polka dots), fill a pastry bag fitted with a straight round tip (small or medium, depending on how big you want your stripes or dots) with the chocolate batter. Pipe stripes or dots directly onto the tuile (leave the stencil in place and lift it after piping on the designs). To make a web pattern, pipe stripes onto the tuile and then gently drag the tip of a knife or a toothpick across the stripes to create the desired effect.

Bake three or four at a time so that you have time to handle them while still warm. Bake 6 to 7 minutes until lightly golden around the edges. Keep an eye on them over the last couple of minutes to make sure they don’t get too dark.

Remove the tuiles from the oven and begin molding them into the desired shape while they are hot from the oven. They’ll cool quickly, so shape them immediately. For classic tuiles, drape them onto a rolling pin until cool. To make cups, drape tuiles over a small inverted ramekin, bowl or glass. For pirouettes, roll them around the handle of a wooden spoon. For cones, shape them by hand. Once the tuiles have been shaped, let them cool on a wire rack. They should be eaten the same day they are baked.

Eggology Egg White Recipe of the Day: Sicilian Pizza Meatloaf

This recipe channels Rachel Ray! With her Italian heritage, which definitely shows up in her cooking, I am sure she has done a recipe similar to this! Who doesn't love pizza and putting all that taste together in a meatloaf makes for an easy, protein-rich meal on your relaxing weekend. As Rachel would say, "Yum"! Enjoy!

Sicilian Pizza Meatloaf
Servings: 6

WHAT YOU NEED:
2/3 cups pizza sauce, divided 1 1/2 lbs
extra-lean ground round
3/4 cup Italian-seasoned breadcrumbs
1/2 cup chopped onion
1 teaspoon dried Italian seasoning
1 teaspoon worcestershire sauce
1/2 teaspoon ground red pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
2 ounces Eggology fresh egg whites
2 (1-ounce) slices part-skim mozzarella cheese
1/2 cup diced red bell pepper
cooking spray

INSTRUCTIONS
Preheat oven to 350º.

Combine 1/3 cup sauce, meat, and next 8 ingredients (sauce through egg white) in a bowl. Shape meat mixture into an 18 × 12-inch rectangle on wax paper. Arrange cheese slices over meat mixture; sprinkle with red bell pepper, leaving a 1-inch border. Roll meat mixture up jelly-roll fashion starting at short side. Pinch ends to seal.

Place meat loaf on a broiler pan coated with cooking spray. Bake at 350º for 1 hour or until meat loaf registers 160º. Brush 1/3 cup pizza sauce over meat loaf. Bake an additional 5 minutes or until done; let stand 10 minutes before slicing.

Serving size: 1 slice
