Strong to the Finish!

We first came across our Diva on a Diet late last year. She is different than most, in that she actually lets you go through her weight loss journey with you - actual weight, successes and failures, all for the blogosphere to see! Her site is full of inspiration and information that is definitely worth checking out!

Taking a Weight Watchers approach to one of her favorite restaurants specialties, she came up with the following healthy and delicious recipe!

Popeye's Omelet
1 Serving

WHAT YOU NEED:
1 slice Niman Ranch All Natural Applewood Smoked Uncured Center Cut Bacon (Nitrate Free)
1/8 - 1/4 cup fresh sliced mushrooms
1/2 cup Market Pantry Flake Style Crab Flavored Seafood with Omega-3
PAM Butter Flavor Cooking Spray
1/2 cup Eggology Organic 100% Egg Whites
1/4 teaspoon Morton Lite Salt Mixture
1/8 teaspoon fresh cracked black pepper
1/8 - 1/4 cup fresh baby spinach
1 Individual 1 oz cup Weight Watchers Reduced Fat Cream Cheese Spread

INSTRUCTIONS:
Cook bacon over medium heat in an 8″ skillet until crisp. Set aside, and reserve 1 tsp bacon fat in the pan.

Add mushrooms to pan. I didn’t really measure them, I just put them in a layer in the pan until no more could fit, which is estimate is about 1/8 to 1/4 cup. Same thing with the spinach. I just grabbed a bunch that I estimated was the same amount. Since they are both healthy and 0 points, I am not as exact with these. While the mushrooms are sauteing, pull stems from the spinach, but the leaves in a pile and roll it up, and then slice, so you get pretty little ribbons of spinach.

Measure out the imitation crab meat. I use my Weight Watchers scale. If you don’t have one, just measure about 1/2 cup. (but you really should get a kitchen scale. They are very useful when measuring caloric-dense food!) Chop up the crab meat into smaller pieces. Crumble up the bacon slice.

Turn over mushrooms, and add crab meat. Leave it in long enough to make sure mushrooms are nice and sauteed, and the crab meat is warm. Set aside. (I put it in a little bowl, and cover with foil to keep warm.)

Spray pan with cooking spray. Add egg whites, and sprinkle with salt and pepper, and then the spinach. When the eggs have set enough to stay together, flip over entire egg. Spread the cream cheese on one side of the egg omelet. (I put the little cup in the microwave for no more than 10 seconds to get it really soft and easy to spread.) Then add the mushroom and crab meat mixture and then the crumbled bacon. Close up the omelet. Because there is not a lot of sticky cheese, it doesn’t stay together that well, so I just let it sit there until I figure it is heated thoroughly and then put it on the plate. I had a couple extra bacon crumbles and strips of spinach that I put on the top.
