Wishing You an Eggxhilarating 2009 from Eggology

2008 is almost over. Can you believe it? Wasn't it just yesterday that we were thinking up the idea of providing you with a safe-to-drink, organic, fresh egg white product that was conveniently packaged. No more cracking eggs and separating out the whites and the yolks. Just open up the fridge and there it is - in that smart clear container where you can see the purity of the product and know that the container is specially made to be sterilized. Oh wait a minute, that was back in 1993! Wow! How time flies.

As Eggology moves forward into our 16th year of business, we want to remind you of how much we've grown. Not only do we continue to supply five-star hotels, restaurants and countless grocery and specialty stores with our egg whites (now available to order online as well), we've also created products that are convenient, but never skimp on quality such as the On-The-Go egg white scrambles (approximately 96 seconds in your microwave, with no mess) and hard-boiled egg 2-paks (peeled, vacuum-packed and ready to eat complete with salt & pepper packets). Our egg whites are so delicious, naturally sweetened, that we've eggspanded to making products with our egg whites such as Simply Sensational (gourmet mini cakes and muffins), Cool Cravings (a higher protein ice cream), and even Norton's Naturals (tasty treats for our four-legged friends).

And for those athletic-enthusiasts out there, Eggology egg whites are the only ones that are safest to drink - Ronnie Coleman, 8 time winner of "Mr. Olympia" thinks they are fabulous. And so does Eva Mendes and Hillary Swank and Valerie Waters (Hollywood's Hottest Personal Trainer) and Dani Spies (Health & Food Coach and Fitness Trainer).

In addition to endorsements by such famous people, Eggology products have appeared in countless magazines (such as Muscle Mag, Allure, Fitness, Oxygen, Runners World, Cooking Light, Self, Women's Health, Running Magazine, Shape, Fit Cooking, Life&Style Weekly, Good Housekeeping and more) online websites and blogs (such as iatepie.net, foodcandy.com, buzztraker.com, slog.thestranger.com, USAtoday.com, bakingdelights.com and more). Visit our Press Page to see a complete list of what Eggology has been featured in!

Our biggest news item this year, we are proud to say, is that Eggology Becomes First Egg Products Brand Certified Humane Endorsed By The Humane Society Of The United States. This means that we not only care about getting you the best possible product, but we also care and adhere to the Humane Farm Animal Care Standards including a nutritious diet without antibiotics or hormones, among other things.

Lastly, we'd like you to know that our website isn't just for placing orders! We invite you to visit our website and our continuously eggspanding Recipe page, featuring breakfast, lunch, dinner, appetizer and holiday recipes made with egg whites as an ingredient.

As with many of you out there, one of my resolutions in 2009 is to live and maintain a healthier lifestyle. Eat egg whites for breakfast, or any time of day, and you are on your way! No cholesterol, no fat, no carbohydrates, simply lean, pure protein. It doesn't get better than that.

From all of us at Eggology, wishing all of you a happy, healthy, eggcellent 2009! Peace!

Diet Tips for New Years: Slim Down in Six Days

Ready to squeeze into that little black dress for your New Years Eve party? You have six days to do it - and it is possible!

I happened to catch a segment on NBC's Today Show this morning and with tips from Joy Bauer, a registered dietitian and nutritionist, it is possible to slim down and get yourself ready for a healthy 2009.

Joy Bauer provided some simple tips (see the video segment here) such as:
  1. Eat breakfast: this revs your metabolism and regulates what you are going to eat for the rest of the day. Her recommendation was an egg white omelet with veggies and half grapefruit - no more than 250 calories. Eggology egg whites are an excellent source of lean protein, no cholesterol, no fat!

  2. "Ditch the liquid losers": give up soda, fruit juice and sweetened coffee.

  3. "Skimp on starch": measure your cereal bowl (only one cup), eat an open-faced sandwich (cutting out one piece of bread can be significant), cut out other starchy foods such as bagels and pasta.

  4. "Cook yourself thin": make your own meals at home; people who regularly eat out consume 32% more calories; control your portions and save money. Find lots of healthy recipes using egg whites on Eggology's recipe page.

  5. Cut out treats: stop adding extra sugars into anything; the false taste of sweetener in your mouth makes it harder to combat sweet cravings.

  6. Snack smarter: one snack a day, between breakfast and lunch or lunch and dinner; 150 calories or less; and remember not just to eat carbohydrates, but add in lean protein too.

  7. Walk it out: 60 minutes a day for 6 days you can burn up to 3,600 calories.

Eggology Egg Whites: Blast from the Past and Forward into the Future

This holiday time of year prompts many to think of the past, of the present, and of the future. Googling the word "Eggology" today, I ran across an article that was titled Incredibly edible - trends - Eggology Liquid Egg Whites and was featured in Vegetarian Times, June 2003. The article goes on to describe how the author met the Chief Eggsecutive of Eggology who introduced her to Eggology and it's egg white product.

What I found interesting was that the title contained the word "trend". According to an online dictionary, a trend is defined as the general direction in which something tends to move or, more loosely, current style; vogue. Obviously I cannot speak for the author of the article however I can see how she may have assumed that egg whites would just be another trend ... a passing fancy, like the many different diets that find their way in and out of our society.

It's been five years since the article was written and we can tell you that Eggology egg whites are here to stay. The demand for egg whites, from athletes and body builders to professional chefs in five-star restaurants to moms and dads have kept Eggology alive and thriving. And for that, we thank all of you. And will continue to provide the best possible egg white product now and into the future.

Gingerbread Houses and Eggology-A Perfect Relationship!

One of the things that I LOVE about the Holiday Season is a good Gingerbread House. I make one every year! One of the main concerns for those that plan on eating the house is raw egg whites in the royal icing that is used as the glue to hold everything together.

Eggology solves that problem! Because our egg whites are safe enough to eat raw, you can make your house and eat it too!

Gingerbread Houses are a great way to bring the family together in a fun, festive activity! Everyone can join in the fun!

After making gingerbread houses for the past 20 years...I think the best recipe can be found on Epicurious. Templates for houses are harder to come by, but who better to trust than home improvement and remodeling expert, Bob Vila, to provide sound construction advice! He has multiple templates and all make great houses!

Finally, you need the GLUE to put your house together!

Royal Icing Recipe

1/2 cup Eggology Egg Whites

7 to 7 1/2 cups powdered white sugar

Using electric mixer, beat egg whites in medium bowl until very foamy, about 1 minute. Add 1/2 cup powdered sugar. Beat until well blended. Add remaining cups sugar, 1/2 cup at a time, beating until well blended after each addition and scraping down sides of bowl occasionally.

Beat icing at high speed until very thick and stiff, about 5 minutes.

You will need to make 2 recipes of royal icing-one batch for gluing the house together and a second batch for decorating!

Happy baking, making and enjoying! Pictures are of my efforts of some Holiday Joy!

Happy Holidays from Eggology!

Let's Get Egg-ducated about Eggology Egg Whites!

Eggology egg whites have a simple, pure look. A beautiful snow white, fluffy piece of food that tastes delicious and is ever-so naturally sweet. Not to mention a lean source of protein, with no cholesterol or fat. When I think about egg whites, I think they are a great choice for any meal (I could eat an egg white omelet or scramble any time of day), and also prefer to bake with them instead of whole eggs, rendering my sweet creations just a little more savory and healthy.

Interested in egg-ducating myself about egg whites, I stumbled upon the wikipedia entry egg whites. In doing so, I discovered some impressive things about egg whites. More than just as a great food, did you know that these are some uses listed for egg whites:
  • In schools it is often used to teach pupils how to test for protein using Biuret reagent.
  • It is used to remove sediments from champagne and beer and to clarify broths.
  • It was used in the emulsion of traditional photographic paper.
  • It was used in medieval medicine to treat wounds and broken bones.
  • It can be used as a base for waterproof glues.
  • It can be combined with gasoline to make a gelled incendiary compound similar to napalm.

Impressed? Me too! You can order Eggology egg whites from the convenience of your home or find them at a store near you!

BRRRRR. I just got back from a trip to Minnesota and it was cold, actually it was colder than cold! I arrive in southern California, and guess what? It's cold here too! And looking at this picture makes me even colder! But I thought it was a great scene for this holiday season.

And the egg white recipe of the day is also a great fit for the holiday season. Enjoy, with a cup of hot tea!

6 oz Eggology fresh egg whites
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt 1 cup ripe banana (about 2) mashed
1/2 cup low-fat buttermilk
Lemon-Cream Cheese Frosting (see recipe below cake recipe)
1 1/2 cups ripe banana (about 2) sliced

WHAT YOU NEED (for frosting):
1 (8 ounce) package cream cheese, softened
1/4 cup butter
2 tablespoons lemon juice
2 teaspoons lemon zest
1 teaspoon vanilla extract
5 cups confectioners' sugar

INSTRUCTIONS for cake
Preheat oven to 350º.

Coat bottoms of 2 (9-inch) round cake pans with cooking spray (do not coat sides of pans); line bottoms with wax paper. Coat wax paper with cooking spray; dust with 1 tablespoon flour.

Lightly spoon 2 cups flour into dry measuring cups, and level with a knife. Combine 2 cups flour, baking soda, and salt, stirring well with a whisk. Combine the mashed banana and buttermilk. Add the flour mixture to sugar mixture alternately with buttermilk mixture, beginning and ending with flour mixture.

Pour batter into prepared pans. Sharply tap pans once on counter to remove air bubbles. Bake at 350º for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes on a wire rack; remove from pans. Remove wax paper. Cool completely on wire rack.Place 1 cake layer on a plate; spread with 1/2 cup Lemon-Cream Cheese Frosting. Arrange banana slices over frosting. Top with remaining cake layer. Spread remaining frosting over top and sides of cake. Chill 1 hour. Store cake loosely covered in refrigerator.

Instructions for frosting:
Beat cream cheese, butter, lemon juice, lemon rind, and vanilla together until smooth and fluffy. Add confectioners' sugar in 2 additions. Beat until creamy. Add more icing sugar or juice as needed for easy spreading. Makes about 3 2/3 cups.

Eggology Featured in GlobalChefs.com

Calling all chefs out there! We found a great resource. It's called GlobalChefs.com. It is a go-to website for all people interested in cooking, with sections such as "featured chefs", gourmet articles, cookbook reviews, environmental kitchen, recipes, even a "career center" and much more. What makes GlobalChefs.com the authority is that it is a culinary online magazine written by chefs! There is even a feature called "The Wine Guy" where you can read up on your favorite wines and beverages, learn about some new ones, figure out how to pair wine with what foods or ask the wine guy for a recommendation!

So were we ever surprised, and honored, when we they featured an Eggology recipe in their Recipe File! But, on second thought, chefs tend to like the finer things in life, and Eggology egg whites are the best - 100% pure, naturally sweetened and delicious!
