Eggology Egg White Recipe of the Day

Do you find that it's hard to feed your family leftovers? Who wants to eat the same meal the next night? But if you re-incorporate the food into something different - it's like a whole new meal with a little less work on your side! One of my favorite foods that can be revived into all sorts of dishes is ... meatballs! The recipe below falls under the "appetizer" category. But the dishes that meatballs can be incorporated into are endless: spaghetti, chili, meatballs with teriyaki sauce, with sweet and sour sauce, with swedish meatball sauce, with sandwiches, on pizzas, in an eggwhite omelet ...

Napa Turkey-Veggie Meatballs
Servings: 6

Notes: 30 meatballs. For moister, more flavored meatballs, use ground turkey that contains light and dark meat rather than just breast meat.

WHAT YOU NEED:
1 1/2 pounds ground turkey
1/2 cup dry breadcrumbs
1/2 cup (2 ounces) finely shredded fresh Parmesan cheese
1/3 cup finely chopped green onions
1/4 cup coarsely shredded carrot
1/4 cup coarsely shredded zucchini
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
2 ounces Eggology fresh egg whites
2 garlic cloves, crushed
cooking spray

INSTRUCTIONS
Preheat oven to 400 degrees.

Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs.

Place on a broiler pan coated with cooking spray. Bake at 400º for 15 minutes or until done.

Serving Size: 5 meatballs
