Egg White Recipe of the Day

We just had the most amazing weekend - warm, sunny weather, clear skies! Summer is near and we are excited. One of the best parts of summer, in my humble opinion, is the fresh fruit available. Blueberries, strawberries, blackberries, raspberries - you get the idea. What goes best with berries? Did you say whipped cream and a little angel food cake?

EGG WHITE ANGEL FOOD CAKE


WHAT YOU NEED

1 1/4 cup cake flour; sifted
1 3/4 cup sugar
1/2 teaspoon salt
12 egg whites; at room temperature
1 1/2 teaspoon Cream of tartar
1 1/2 teaspoon Vanilla extract
1/2 teaspoon Almond extract; optional

INSTRUCTIONS
In bowl sift together flour, 3/4 cup sugar and salt. Re-sift 3 times. Set aside.
Beat egg whites until foamy.
Add cream of tartar and continue to beat until soft peaks form.

Gradually beat in remaining 1 cup sugar, 2 tablespoons at time, until mixture holds stiff peaks.

Fold in vanilla and almond extracts.

Add 1/4 flour mixture at time, folding in gently with rubber spatula. Gently spoon batter into ungreased 10-inch angel food cake pan.

Cut through center of batter 2 or 3 times with spatula to remove large air bubbles.

Bake at 350 degrees 40 to 45 minutes or until top springs back when touched with finger and wood pick inserted near center comes out clean.
Invert pan over bottle or inverted funnel and let stand until thoroughly cool. When cool, loosen sides and center with metal spatula and turn out onto platter.

Egg White Appetizer Recipe of the Day

Since the last post was about an eggwhite cocktail, I definitely have had happy hour on my mind (by the way, Happy Friday!). Last weekend, I had an incredible (and incredibly healthy) dinner cooked by a friend of tuna, quinoa (heard of it? it's a high protein grain), and a salad full of vegetables with a homemade dill dressing. Never being a huge fan of tuna before, well, I am now. So basically what's been on my mind is tuna and happy hour. What better recipe than this one?

Tuna Cakes with Dill Tarter Sauce

Servings: 2

Notes: Serve with Dill Tarter Sauce.

WHAT YOU NEED:
vegetable cooking spray
3/4 cup finely chopped celery
3/4 cup finely chopped onion
2 tablespoons light process cream cheese product, softened
2 teaspoons lemon juice
1/8 teaspoon white pepper
1 dash ground red pepper
1/3 cup fine dry breadcrumbs
1 teaspoon dried whole dill weed
1 (9.25-ounce) can (less salt) tuna in water, drained
2 ounces Eggology fresh egg whites
2 ounces dill Tartar Sauce (see recipe)


Dill Tartar Sauce

2 tablespoons Mayonnaise
1 tablespoon Plain togurt
1 tablespoon Onion -- chopped
1 tablespoon Cucumber -- chopped
1 teaspoon Dried dill
1 teaspoon Lemon juice

INSTRUCTIONS
Add celery and onion; sauté until tender. Remove from skillet, and place in a medium bowl. Add cream cheese and next 3 ingredients; stir well. Add breadcrumbs and next 3 ingredients; stir well. Divide mixture into 8 equal portions, shaping each into a 2-1/2-inch cake. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.

Coat skillet with cooking spray; place over medium-high heat until hot. Add 4 cakes, and cook 2 minutes on each side or until browned. Remove cakes from skillet; set aside, and keep warm. Repeat procedure with remaining cakes.
Combine tartar sauce in small bowl. Serve with tuna cakes.

Serving size: 2 cakes and 1 tablespoon sauce

Egg White Recipe of the Day: Egg White Cocktail

As I know them, egg whites have many uses . . . but this was a new discovery to me. I came upon a short article in Esquire magazine that touted the egg white cocktail. Apparently very famous back in the day (think 1800s) where the egg white would add smooth creaminess and a frothy head to the drink.

This recipe, thank you to Esquire magazine, by a St. Paul bartender, won him the 1901 National Police Gazette bartender's medal. Here's to a little history!


The Elks Own


Combine in cocktail shaker:
1-1/2 oz straight rye whiskey
1 oz Graham's Six Grapes ruby port
1/2 oz fresh-squeezed lemon juice
1 tsp simple syrup (2 parts sugar to 1 part water)
1 oz (or 2 tablespoons) organic egg white

Without adding ice, shake briefly but viciously. Add ice, shake again for 8 to 10 seconds, and strain into chilled cocktail glass.

Eggology Egg White Recipe of the Day

Are you familiar with the old adage "you are what you eat"? Keeping that in mind, we like to choose the freshest, healthiest products for our family. One of our main food staples are Eggology egg whites because they are simply divine and adhere to our food standards. I've found myself using them in place of eggs in lots of recipes. And one favorite is the pancake recipe. We used to make our pancakes with a few basic ingredients. But once I stumbled upon this recipe, there was no going back! These pancakes are delicious and healthy! (Shhh, don't tell the kids!)

Notes: Yield 4 cups

WHAT YOU NEED:
1 cup low-fat buttermilk
3 tablespoons vegetable oil
3 ounces Eggology fresh egg whites
1 1/2 cups (see below) multigrain pancake mix *
vegetable cooking spray

* Multigrain Pancake Mix

1/2 cup regular oats
2 cups all-purpose flour
1/2 cup whole-wheat flour
1/2 cup cornmeal
1/4 cup unprocessed wheat bran
1/4 cup toasted wheat germ
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda

Multi-grain Pancake Mix: Place oats in food processor, and process until smooth. Add remaining ingredients: process until smooth. Store in a tightly sealed container in refrigerator.

INSTRUCTIONS
Combine first 3 ingredients in a bowl; stir well. Add pancake mix, and stir until smooth (batter will be slightly thick).

Spoon about 1/4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges looked cooked.
Yield: 10(4-inch) pancakes (serving size: 1 pancake)

Eggology Egg White Recipe of the Day

In our neck of the woods ... okay, maybe just in our household ... the sweet potato is often overlooked. We buy red potatoes and brown potatoes (and sometimes no potatoes - depending on which way our obsession with carbs is going) but rarely do we buy a sweet potato. Sweet potatoes are a great source of vitamins (B6 and C), beta carotene and dietary fiber. In fact, their nutritional value packs way more of a punch then the common potato!

Now are you wondering how to incorporate it into your meal? Well, here's a suggestion:


Marvelous Maple Sweet Potato Casserole
Servings: 8


Notes: Garnish with oregano, if desired.

WHAT YOU NEED:
1/3 cup yellow cornmeal
1 1/2 cups skim milk 2 tablespoons margarine
1 1/4 pounds sweet potato, cooked, and mashed
1/3 cup maple syrup
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon pepper
4 ounces Eggology fresh egg white, lightly beaten
vegetable cooking spray


INSTRUCTIONS
Place the cornmeal in a medium saucepan. Gradually add milk, stirring with a wire whisk until blended. Bring to a boil; reduce heat to medium. Cook, uncovered, 2 minutes, stirring constantly with a wire whisk. Remove from heat; stir in margarine. Set aside.

Combine sweet potato and next 6 ingredients (sweet potato through egg whites) in a large bowl; stir until well-blended. Gradually add cornmeal mixture, stirring constantly. Pour sweet potato mixture into a 1-1/2-quart casserole coated with cooking spray.
Bake at 350 degrees for 40 minutes. Let stand 10 minutes before serving.

Serving size: 1/2 cup

Easy-As-Sunday-Morning Lemon Squares
Servings: 16


WHAT YOU NEED:
1/4 cup granulated sugar
3 tablespoons butter or stick margarine, softened
1 cup all-purpose flour

TOPPING
4 oz Eggology fresh egg whites
3/4 cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tablespoons baking powder
1/2 teaspoon all-purpose flour
1/8 teaspoon salt
2 teaspoons powdered sugar


INSTRUCTIONS
Preheat oven to 350º.


To prepare the crust, beat 1/4 cup granulated sugar and the butter at medium speed of a mixer until creamy. Lightly spoon 1 cup flour into a dry measuring cup; level with a knife. Gradually add 1 cup flour to sugar mixture, beating at low speed until mixture resembles fine crumbs. Gently press mixture into bottom of an 8-inch square baking pan. Bake at 350º for 15 minutes; cool on a wire rack.

To prepare topping, beat egg whites at medium speed until foamy. Add 3/4 cup granulated sugar and next 5 ingredients (3/4 cup granulated sugar through salt), and beat until well-blended. Pour mixture over partially baked crust. Bake at 350º for 20 to 25 minutes or until set. Cool on wire rack. Sift powdered sugar evenly over top.

Eggology Egg White Recipe of the Day

Frittata. Say that ten times! We never really knew the difference between a frittata and a quiche but upon our research (thank you Wikipedia) have found that one is French with a crust (quiche) and one is Italian with no crust (frittata, frittata!). Both are what we consider egg pies and are usually served for breakfast, lunch or brunch. What we love about the frittata is that it is just as scrumptious as a quiche - but with no crust - thus eliminating lots of calories and fat.

Another great way to make it a more healthy meal is to substitute the eggs in the recipe for Eggology egg whites. We happen to have quite a selection of frittata recipes online, but this is one of our all time faves. Enjoy!

America's Heartland Frittata

Serving size: 2
Notes: Serve with a salad of baby greens for an ideal dinner.
WHAT YOU NEED:

1 cup diced peeled baking potato
1/2 (2 ounces) shredded fat-free cheddar cheese, divided
6 ounces Eggology fresh egg whites, lightly beaten
2 teaspoons reduced-calorie margarine
1/2 cup diced red onion
1/2 cup diced red bell pepper
1/2 cup diced lean Canadian bacon
2 garlic cloves, minced
1/4 cup fat-free sour cream

INSTRUCTIONS
Place potato in a small saucepan; cover with water. Bring to a boil. Cook 10 minutes or until tender; drain.

Preheat oven to 450 degrees.

Combine 1/4 cup cheese, egg whites; stir well. Set aside. Melt margarine in a 10-inch nonstick skillet over medium heat. Add potato, onion, bell pepper, bacon, and garlic; sauté 5 minutes. Stir in egg mixture; spread evenly in bottom of skillet. Cook over medium-low heat 5 minutes or until almost set.

Wrap handle of skillet with foil; place skillet in oven, and bake at 450 degrees for 5 minutes or until set. Sprinkle with remaining 1/4 cup cheese; bake an additional minute or until cheese melts. Top each serving with sour cream.

Eggstra! Valerie Waters' Eggcellent Egg White Recipe

Getting in shape - and staying in shape - is not just about fitness. It's about nutrition as well. Even Valerie Waters, "Hollywood's Hot Trainer" proclaimed by US Magazine, implements food rules - one of them is to learn to cook five or six things that can be made in less time than it takes a pizza delivery to arrive.

And one of her favorite recipes is made with Eggology Egg Whites. Her eggcellent recipe is below (try this for dinner too!):

Egg white spinach, mushroom, onion and feta cheese scramble (Valerie's favorite breakfast)

WHAT YOU NEED:

1/3 cup Eggology liquid egg whites
Small handful of chopped mushrooms
1-2 tablespoons chopped onion
2 big handfuls of spinach
1 tablespoon crumbled feta cheese

INSTRUCTIONS:

Spray a non-stick pan with Pam cooking spray and heat on medium high.

Add mushrooms and onions and stir until browned. Add 2 giant handfuls of spinach (don’t worry it will cook down). Toss spinach until wilted.

Reduce heat to medium and add in egg whites and continue to stir until eggs begin to set.

Add feta cheese and continue to stir for about 30 more seconds and serve.

Eggology Interview with Personal Trainer Valerie Waters

Valerie Waters is one of Hollywood Hottest trainers, someone we really admire (a total health enthusiast and role model) and a lover of Eggology Egg whites! Valerie was kind enough to take time out of her busy training schedule to answer some questions for our readers....enjoy!

Q. How did you get into personal training?
I ran track in high school. One day the coach took us into the weight room and taught us how to lift weights. I was fourteen years old and remember that day like it was yesterday. From then on I was obsessed with working out and began a life long love affair with weight training. Eventually I got a job at a gym selling memberships which I was never very good at. Management convinced me to try training. The industry was just emerging at this time and this gym was one of the fist to actively promote it. Within a month of starting, I was booked solid eight hours a day and loved it! I knew then that I had found my calling. It is nearly 20 years later and I still love it!


Q. How did you discover Eggology products?
I originally saw it in the supplement section at Gold’s Gym. I bought it on the spot and have not turned back since. It is a well known fact that egg whites pack a nutritional punch. Now with Eggology, I can be assured of getting a good source of protein and because of the convenience I can save time in the kitchen.

Q. In what ways do you recommend Eggology to your clients?
Many of my clients don’t cook either because they think they don’t have time or they don’t know how. Scrambled egg whites using Eggology is one of the first things I teach because of the simplicity and the fact that I want my clients eating breakfast. Besides the fact that egg whites are a great source of protein, they are fast and easy.

Q. What is your philosophy on health and fitness?
I believe that exercise is a means to an end. You workout out in the gym (or home gym) because it is a very efficient way to build strength and endurance, but I want you to take that new level of fitness and get out and have some fun. For me that is surfing or hiking with friends. For you it may be something else. The bottom line: workout to look better but don’t make that your only goal. There is so much more available to you when you adopt a healthy lifestyle.

Q. Do you have any athletic role models?
Lance Armstrong. I don’t even ride a bike but I am simply in awe of what this guy has accomplished athletically, personally and professionally.

Laird Hamilton. Here again, I can’t do any of the things Laird can do but I am inspired by his 100% commitment to living life to the fullest extent of his being. He helped bring new meaning to extreme surfing and he pioneered many sport innovations.

To me, these two men represent energy personified.

Q. What inspires you to stay so healthy and fit?
My job and my clients certainly, but more important is the quality of my life. I simply cannot imagine my life without exercise. It affects everything; my energy, my mood, my creativity, my skin, my body. I am truly grateful for my body even with its imperfections and minor aches and pains.

Q. If there is ONE piece of health advice you can give our readers, what would it be?
There is no magic pill. Being fit requires commitment and effort but please recognize there is joy in this. Being fit is not a two week diet or a new piece of exercise equipment (although these things may kick it off) it is making small but meaningful choices each day. Choosing to get up an hour earlier to workout instead of staying in bed, bringing a healthy lunch with you to work instead of going out for fast food, choosing water over soda, or choosing grilled chicken over chicken enchiladas. Each action builds on the other until you are living your life as a healthy fit person. At this point, there is a lot less struggle because these actions have become habits. There is no argument about whether to stay in bed or not, if it is workout day, you just put your feet on the floor. Q. Tell us about the Valslide! How you got the vision for this, etc.
The Valslide is without a doubt the most effective and most portable fitness product on the market. The Valslide will help you sculpt your body fast and effectively, no matter where you train. My clients (and I) are always traveling, whether it is for a movie shoot or for vacation. Often times people fall off track with their fitness program while they are away simply because they don’t have access to equipment. Now that my clients have the Valslide, they can get in a workout wherever they are. They just throw it in their purse or suitcase and it’s all they need to get in a great workout.

I was inspired to create the Valslide after being frustrated that my slide board took up so much room and I could not easily bring it with me to a client’s house. I had learned the value of the slide board exercises when I trained at a facility catering to professional athletes. Eggology Egg White Recipe of the Day

Do you find that it's hard to feed your family leftovers? Who wants to eat the same meal the next night? But if you re-incorporate the food into something different - it's like a whole new meal with a little less work on your side! One of my favorite foods that can be revived into all sorts of dishes is ... meatballs! The recipe below falls under the "appetizer" category. But the dishes that meatballs can be incorporated into are endless: spaghetti, chili, meatballs with teriyaki sauce, with sweet and sour sauce, with swedish meatball sauce, with sandwiches, on pizzas, in an eggwhite omelet ...

Napa Turkey-Veggie Meatballs
Servings: 6

Notes: 30 meatballs. For moister, more flavored meatballs, use ground turkey that contains light and dark meat rather than just breast meat.

WHAT YOU NEED:
1 1/2 pounds ground turkey
1/2 cup dry breadcrumbs
1/2 cup (2 ounces) finely shredded fresh Parmesan cheese
1/3 cup finely chopped green onions
1/4 cup coarsely shredded carrot
1/4 cup coarsely shredded zucchini
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
2 ounces Eggology fresh egg whites
2 garlic cloves, crushed
cooking spray

INSTRUCTIONS
Preheat oven to 400 degrees.

Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs.

Place on a broiler pan coated with cooking spray. Bake at 400º for 15 minutes or until done.

Serving Size: 5 meatballs
