Eggology Egg White Recipe of the Day: Chocolate Frosting

Not that this is a meal in and of itself, but who can resist eating just a little bit of homemade chocolate frosting? Yum, as Rachel Ray would say. Now that it's October, the month of Halloween, which leads us rapidly into the holidays, this homemade recipe for chocolate frosting is something to keep handy at all times, for all those special occasions. Yum. Yum. Yum.


Ultimate Chocolate Frosting

WHAT YOU NEED:

4 ounces semisweet chocolate
3/4 cup Eggology egg whites at room temperature
1 cup granulated sugar
1/4 teaspoon cream of tartar (or try substituting lemon juice)
3/4 teaspoon kosher salt
1 pound unsalted butter at room temperature
3 teaspoons pure vanilla extract
3 teaspoons instant espresso powder, dissolved in 1 1/2 teaspoons water
3 tablespoons dark rum (optional)

INSTRUCTIONS

Melt the chocolate–either in microwave or with double boiler.
Mix the egg whites, sugar, cream of tartar, and salt in the bowl of an electric mixer fitted with a whisk attachment.

Place the bowl of Eggology egg whites over the pan of simmering water and heat the Eggology egg whites until they are warm to the touch, about 5 minutes. Return the bowl to the electric mixer and whisk on high speed for 5 minutes, or until the meringue is cool and holds a stiff peak. (If this process isn’t feasible, it will still turn out great if you skip it.)

Add the butter, 1 tablespoon at a time, while beating on medium speed. Scrape down the bowl, add the melted chocolate, vanilla, espresso, and rum, if using, and mix for 1 minute or until the chocolate is completely blended in. If the buttercream seems very soft, allow it to cool, and beat it again.

This makes A LOT of frosting, and you can chill and reuse. When it chills, it will stiffen. To reuse, just let it sit at room temperature until it regains the right texture.

Eggology Egg Whites Cultural Piece: The Yin and Yang of Yolks and Whites

In the first ever Cultural Piece by Eggology, we will be comparing the egg as a whole and as separates to the ancient Chinese philosophy of yin and yang. According to Wikipedia, yin and yang "are generalized descriptions of the antitheses or mutual correlations in human perceptions of phenomena in the natural world, combining to create a unity of opposites". In essence, two opposites that compliment each other. Similar to the egg white and the egg yolk.

Upon further research (okay, scanning down the Wikipedia page), we come to find that there are four laws of Yin-yang (all definitions provided by Wikipedia, examples provided by Eggology):

  1. Yin-yang are Opposing: Yin and yang describe the polar effects of phenomena. In viewing any one phenomenon (or the comparison of two phenomena), yin and yang describe the opposing qualities inherent in it. For instance, egg white and yolk would be the yin and yang, respectively, of the egg.

  2. Yin-yang are Mutually Rooted: Yin and yang are two complementary qualities. That is to say, the yin and the yang aspect of any one phenomenon will, when put together, form the entire phenomenon. Yin-yang is a philosophy of duality. This is the reason the Chinese word has no "and" between yin and yang - the term always expresses the two making up the one. In the example above, egg white plus yolk makes up the whole egg.

  3. Yin-yang Mutually Transform: The maximum effect of one quality will be followed by the transition toward the opposing quality. In other words, once the maximum Yang aspect has manifest, such as the egg whites becoming one without a yolk, this will be followed by the transition toward the Yin aspect, by placing the yolks with each other for company.

  4. Yin-yang Mutually Wax and Wane: As one aspect declines, the other increases to an equal degree. For instance, as the egg whites join the Eggology family, the yolks venture onward to join salad dressing and ice cream families.

Eggology Egg White Recipe of the Day: Great Granola Bites (Diabetic Recipe)

Who doesn't love granola these days? When I was a child, granola bars were hard as a rock and dry. They've come a long way. Nowadays they tastier - all sorts of new healthy ingredients have been added such as dried fruits, nuts, peanut or almond butters, even a bit of chocolate. Not only is it a great source of fiber and protein, it is actually easy to make. How healthy is that?!

Our recipe of the day is pretty simple. It's for granola cookies AND it's a diabetic recipe too.

Great Granola Bites (Diabetic Recipe)
Servings: 2 dozen bites
WHAT YOU NEED:
2 cups corn flakes cereal
2/3 cup quick-cooking oats
1/4 cup 100% bran cereal
1/2 cup chopped pitted dates or raisins
1/2 cup reduced-fat crunchy peanut butter
1/2 cup Eggology egg whites
5 teaspoons Equal for Recipes (sugar substitute) or 16 packets Equal sweetener
2 teaspoons vanilla extract

INSTRUCTIONS
Preheat oven to 350 degrees.

Combine cornflakes, oats, bran cereal and dates in large bowl.

Mix peanut butter, Eggology egg whites, Equal and vanilla in small bowl until smooth; pour over cereal mixture and stir until all ingredients are coated.

Shape mixture into 1-inch mounds; place on lightly greased cookie sheets.

Bake in preheated 350 degree oven until cookies are set and browned 8 to 10 minutes. Cool on wire racks.

Nutrition Information Per Serving (1 cookie): Calories: 67, Protein: 3 g, Carbohydrates: 9 g, Fat: 3 g, Cholesterol: 0 mg, Sodium: 61 mg. Food Exchanges: 1/2 Bread, 1/2 Fat.

Eggology Egg White Recipe of the Day: Dani Spies' Strawberry Smoothie

Since Eggology egg whites are the only egg whites safe to drink and eat, we've gotten quite a few requests for drinkable egg white recipes. One recipe that we've tested, and are addicted to, comes from the super-savvy health and food coach, Dani Spies. Watch the video on Dani's site and learn how to make the perfect smoothie! The only difference between her recipe and ours is that we throw in a 1/4 cup of fresh Eggology egg whites to give it that extra protein punch!

Dani Spies' Strawberry-Vanilla Smoothie

What you need
1 cup of frozen strawberries
1 scoop of vanilla protein powder
1 cup of unsweetened vanilla soymilk
1/4 cup Eggology egg whites
2 tbsp of water

Instructions
Pour vanilla soymilk, water, Eggology egg whites and protein powder in the blender. Blend about 15 seconds.

Add frozen strawberries and blend for about 20 seconds.

Enjoy!

Amy Dungan, our favorite healthy low-carb living guru, is going national! Not only does she run the most thorough and informative website on living a healthy low-carb lifestyle, but her food-savviness is now being featured in the Fitness & Weight Loss section of the Examiner.com - a nationally known newspaper that is now on the web!

Recently Amy featured a review of Eggology products on Examiner.com. She featured the On-The-Go eggwhite cups and the hardboiled eggs. Eggology was praised not just for a good meal for "those of us who need something in a hurry" but also for the taste and texture and was touted as a "good fit for any diet". We wholeheartedly agree with Amy and thank her for spreading the message to the nation!

Eggology in the News: Quick & Nutritious Breakfast

The CBS affiliate in Philadelphia featured Eggology egg whites in their "Quick & Nutritious Breakfast" segment yesterday. Eggology On-The-Go microwavable egg whites were one of three breakfast items featured that can be made in under five minutes and are nutritious.

It's simpler than preparing a bowl of cereal! Shake the egg whites and put the cup in the microwave. In about 95 seconds, you will have fluffy, scrambled egg whites. No cholesterol, no fat but lots of pure protein and no pots and pans to clean up. The saying "Easy as pie" should really be "Easy as Eggology Egg Whites"!

P90X: Extreme Home Fitness

Have you seen the commercials for P90X? It is the Extreme Home Fitness System that boasts real results in 90 days. If you haven't seen the commercials, the end result is an extremely ripped body (AKA total muscle definition). And don't get this confused with "toned". The transformations of both men and women who have done this are truly jaw-dropping. The P90X system includes workout DVDs and a nutrition guide. Why is it so effective? The workouts keep changing over the 90 days - leading to "muscle confusion" so your body doesn't plateau, as it would doing the same workout.

Does this really work for most people? A friend of mine is so excited to start the program, she has P90X as a contact in her cell phone! Now that her kids have gone back to school and she has more free time, she is going to start the P90X program. And all from the comfort of her own living room . . . I can't wait to monitor her progress. And, of course, I'll keep you posted!

Eggology Egg White Recipe of the Day: Bravo Blueberry French Toast Casserole

Wow! I can hardly think of an introduction to this recipe because my mouth is watering as I look at the picture (see picture at right). Having weekend guests? This is a great recipe that you can throw together and put in the oven. It's easy, tasty and good for you. Blueberries are a superfruit: full of antioxidants to keep you healthy. Enjoy!

Bravo Blueberry French Toast Casserole
Servings: 8
WHAT YOU NEED:
1 1/2 cups Eggology eggwhites
3/4 cup sugar
3 cups low-fat milk
1 teaspoon vanilla extract
10 slices high-fiber bread, cut into cubes
3 cups blueberries
1 tablespoon butter, melted
Cinnamon Sugar:
1/4 cup sugar
2 teaspoons cinnamon

INSTRUCTIONS
Preheat oven to 350 degrees F.

Coat a 9-by-13-inch pan with nonstick spray. Set aside.

In a large bowl, whisk Eggology egg whites, beat and combine with sugar. Add milk and vanilla; mix well.

In a small bowl, combine cinnamon and sugar; set aside.

Place 1/3 of bread cubes on the bottom of prepared pan. Pour 1/3 of the milk-and-egg mixture on top of the bread. Sprinkle bread cubes with 1 cup of blueberries and 1/3 of the cinnamon sugar. Repeat layering 2 more times. Pour melted butter over top, covering as much surface as possible. You can prepare the dish up to this point as early as the night before, but at least half an hour before. Cover with plastic wrap; refrigerate.

Bake for 45 minutes, or until a sharp knife inserted halfway between the center and the edge comes out clean. Remove from oven and let stand for about 10 minutes before cutting into 8 servings.

Eggology Egg White Recipe of the Day: Hearty Chicken Pie Pockets

Over the years, I've learned a thing or two in the kitchen. Usually this comes about by family members complaining, or "constructive criticism" as certain people like to put it, about something or another about the meal. Two rules I've learned to cook by:

  1. Do not divulge the ingredients in any dish, unless specifically asked, and if one must answer, then forget to mention the spinach, beets and carrots that are pureed into it.

  2. Do not serve leftovers; disguise them as a whole new meal.

These two rules go hand-in-hand. If you practice not divulging all the ingredients in a meal, and become good at creating a new meal with leftovers, then you've got a happy family and a clean fridge! Who could ask for anything more? (Well, I could, but that's a whole different post ...)

So the today's recipe of the day is a perfect example of how to use your leftovers in a constructive way. Who wants to eat day-old white meat chicken? Re-heating it will leave it rubbery. But this recipe puts it in a whole new light - and it's simple, straightforward and tasty!

Hearty Chicken Pie Pockets
Servings: 4

WHAT YOU NEED:
1 pound leftover white-meat chicken, cut into cubes
1 cup frozen carrot slices
1 cup frozen peas
1 cup frozen chopped onions
12 ounce jar of chicken gravy
fresh cracked pepper, to taste
1 package refrigerated pie crust
1 cup sharp cheddar cheese
1/4 cup Eggology egg whites, beaten


INSTRUCTIONS
In a large saucepan, combine the chicken, vegetables, and gravy. Bring to a boil and season with the fresh cracked pepper.

In the meantime, place the two rounds of pie dough on a floured surface and allow them to come to room temperature. Then sprinkle each round with a half cup of the shredded cheese and press it into the dough.

Flip the dough over and place half of the chicken mixture on each round. You will only want to place the filling on one half of the dough, making sure to leave room to crimp the edges.

Fold the dough over and crimp the edges with a fork. Carefully place the pockets on a nonstick cookie sheet and brush with the Eggology egg whites.

Cut slits into the top of each pocket and bake in a 425 degree oven for 15 to 20 minutes or until golden brown.

Eggology in the News: Women's Health "Best Packaged Foods"

In the Women's Health magazine September 2008 issue, Eggology was featured as one of the 125 Best Packaged Foods! This is their second annual list of "great-for-you products" to help you take "the guesswork out of grocery shopping".

I couldn't agree with Women's Health more! Having Eggology egg whites on hand makes cooking easier. They are fresh and will taste great in any recipe or as a meal by themselves. And, if you find yourself using egg whites mostly for scrambles or omelets, an even better option are the Eggology On-The-Go microwavable cups. They are measured out for one serving and make the healthiest meal (or snack)!

Is There Such a Thing as Eggcellent Diet Foods?

I'm not really into dieting, I actually dread the thought! BUT, I do like to eat healthy foods and keep myself in shape, especially as I am getting (just a little bit) older. It seems there is constantly a new product on the market that likes to claim it is THE best diet food, or low carb, low fat, low sugar alternative. I can't keep up with all of the new stuff. A friend and I were discussing this very issue when he pointed me to a great site that does all the work for you. Iateapie.net reviews foods that are advertised as "diet" friendly. They provide a non-biased look at products with taste tests and ratings as well as provide a forum for discussions on the latest craze!

One of the other things that gets confusing is reading all the labels -"how healthy is it?" is a question I am always asking my self, with skepticism. Tanya Taylor, the brains behind the site, has a PhD in Food Science and Nutrition and currently works as a Food Chemist for a food ingredients company. Who better to help me read the labels than a PhD in Food!

With a busy life and too many new products to count, it's a great way to learn something and save time! You can go through their archive by ratings, so you can see the products that got the highest ratings and skip the ones that didn't. They even provide a list of coupons for some of their favorite foods.

It's definitely worth checking out this site before you go to the grocery store!
